My Gluten Free Version of Panera Bread’s Tomato Mozzarella Salad

I love every single soup, salad, and sandwich that they make! I am not even soup person either, but I just cannot get enough of their food, bread, and beverages. Sadly, they are a gluten intolerant, or Celiacs worst nightmare. Now that my husband is gluten free it is going to be a rare occasion that I visit Panera Bread…sniffle…sniffle.

One of my most cherished dishes from Panera Bread is their seasonal Tomato & Mozzarella Salad. I love the way they use red onion, fresh basil, and tomatoes with that heavenly balsamic! The bread is also to die for, and may be why I love the salad so much. Since this month we are making restaurant inspired creations, I thought it woudl be neat to make a gluten free version of Panera Bread’s Tomato Mozarella Salad.

Caprese Salad 1 My Gluten Free Version of Panera Breads Tomato Mozzarella Salad I bet your thinking this looks nothing like their’s and you are correct! My little ones hate onions,  which makes me oh so sad. Those little buggers also will not eat chopped basil but they will eat it whole leaf?? I also accompanied my tomato mozzarella salad with some Blaze Balsamic Vinegar, and some freshly made focaccia bread baked myself courtesy of Bella Gluten Free mix.

Ingredients:

  • 1-2 tomatoes on the vine
  • 1 ball of fresh mozzarella
  • fresh basil leaves
  • *thin sliced red onion {not pictured}
  • *balsamic vinegar
  • *focaccia bread

Chop your tomatoes, and fresh mozzarella.

Thinly slice your red onions, and basil

Toss with your balsamic vinaigrette.

Enjoy with some fresh focaccia
