Easy Gluten Free Meal Idea: Grilled Chicken, Cheese and Honey Mustard Wraps

When you’re crunched for time, eating healthy can sometimes feel impossible. However, it doesn’t have to be that way! I have a great suggestion for you that can save you hours each week! Why not mass batch grill 3-5 lbs of chicken breast on the grill? My husband and I recently stumbled upon an amazing deal on organic, farm raised chicken breast that was on a reduced quick sale. I knew the meat needed to be used fast so I decided to grill it all at once.
It literally took no more than 20 minutes tops to grill a whopping 5 lbs of chicken breast. This small time investment has been paying off huge for me this week because I have been able to prepare 4 healthy meals and even some lunches!

- Chicken Salad
- Chicken Topped Pizza

This brings me to my all time favorite meal of the bunch which happens to be the Grilled Chicken, Lettuce, Cheese and Honey Mustard Wraps. These VERY easy to make meal ideas were a hit with my kids! It is so amazing how simply switching ingredients up can really catch their attention and “trick them” so to speak. The other night they would not eat their chicken on a salad, but apparently the Udi’s Tortillas we used possessed magical powers because the kids ate everything up in minutes!
I love that Udi’s Gluten-Free products because they allow my family members with wheat allergies to be able to continue to enjoy past food favorites. My kids LOVE their gluten free breads, granola items, pizza crust, and chips. They have just so many amazing gluten free items that taste so fresh, and yummy!

- Shredded cheese

The beauty of this meal is that the chicken does not have to even be warm! Cut your grilled chicken breast into 1/2 inch thick strips and add about 5-6 strips, a pinch of cheese, honey mustard, and lettuce! What a simple and delicious, and healthy meal!
