I’ve tried a few gluten free baked goods including coffee infused cupcakes, and sugar cookies, but other than those I have not done much. Thanks to a recent opportunity to review King Arthur’s Gluten Free Multipurpose Flour, I was able to once again make a favorite family dessert; my homemade, now gluten free lemon squares.

I really love the fact that we can all enjoy them once again! Since lemon is one of my absolute favorite fruits to cook and bake with, I find lemon squares to be an amazing treat! With a small tweak in baking times, I found my gluten free lemon squares to be even tastier than my conventional recipe, and you cannot even tell they are gluten free!

One thing I really loved about the King Arthur Gluten Free Multipurpose Flour was that it required no extra steps. I was using a 1/2 and 1/2 baking mix composed of rice flour, and tapioca starch, but now thanks to King Arthur my time in the kitchen experimenting has been cut in half, and simplified. Each box of King Arthur Gluten Free Multipurpose Flour comes with 24 ounces, or 3 cups of flour. I wish they at least had 4 cups of flour in the box because most recipes call for around 2 cups of flour, but that is ok!

King Arthur gluten free flour Gluten Free Lemon Squares RecipeGluten Free Lemon Squares Ingredients:

  • 1 cups butter softened (2 sticks)
  • 1/2 cup white sugar
  • 2 cups King Arthur Gluten Free Multipurpose Flour
  • 4 eggs
  • 1 & 1/2 cups white sugar
  • 1/1 cup King Arthur Gluten Free Multipurpose Flour
  • 2 lemon juiced, and grated
  • 9 x 13 pan

Directions for Crust:

  1. Pre-heat your oven to 350 degrees
  2. In a bowl mix your 2 cups of flour, 1/2 cup sugar, and softened butter. Press into an ungreased 9×13 pan
  3. Bake for 25 minutes (I noticed gf flour takes longer to firm)

Directions for Filling:

There is nothing more annoying than a cutting board that slips around a counter. This board is not only sleek, but the rubber non-slip corners (red) kept my board in place while I juiced, and grated my lemon peels. I really love this board because it easily stores, is dishwasher safe, and the non-slip corners come off for an easy, thorough cleaning.

Epicurean non slip cutting board Gluten Free Lemon Squares RecipeIn a bowl mix your 4 eggs, 1 & 1/2 cups sugar, 1/4 cup flour, juiced & zested lemon.

Pour over your crust-place back into the oven, and cook for another 25 minutes. Let your bars cool, and cut them into squares.

Baked Crab Rangoons Easy Baked Crab Rangoons Recipe Crab Rangoons are one of my favorite “guilty pleasures”. Until today, I’ve only ever had them deep fried, and at Chinese restaurants, or take out. I love the crisp, flavor, and taste of these appetizers, and could eat them everyday, and by the dozens. Since I’m actively trying to eat healthier I decided it would be my mission to make a batch of healthier, baked Crab Rangoons.

Since I’ve tried all kinds of Crab Rangoons form dozens of restaurants, I’ve found what tastes I prefer. Some places make them too crabby, some too cheesy, and other too sweet. I like a sweet, and savory balance so that is how I concocted my recipe. It was my second time working with wonton wrappers so this time instead of using oil, I used water to mold them, and it worked like a charm!!

Easy Baked Crab Rangoons Recipe

  • Wonton wrappers
  • 1 8oz package of softened cream cheese
  • 1 tablespoon soy sauce
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon (1 large clove) finely minced garlic
  • 2 stalks green onion finely chopped
  • 6 oz of crabmeat. I prefer imitation because it is not too strong. That is exactly what our local restaurants also use.

Uncooked Crab Rangoons Easy Baked Crab Rangoons RecipeDirections:

Preheat oven to 425

Spray two baking sheets with nonstick spray or olive oil

Finely mince your crab, and other ingredients

Fill a small bowl with water (for dipping your fingers in to seal the wrappers)

Mix all ingredients in a large glass bowl until mixture is fully mixed

Using a spoon scoop a little crab mixture into the center of your wrapper

Fold wrapper over into a triangle shape

Dip your fingers in the water to seal the wrapper

Repeat Process-Makes about 36-40

Bake for 10 minutes or until edges are golden brown-don’t be alarmed if they get a little darker-these wrappers tend to crisp up fast-so no more than 12 minutes max!!

Gluten Free Quinoa Macaroni and cheese Quinoa Macaroni & Cheese Recipe #glutenfreeIn honor of  our Meatless May Challenge, I have been inspired to make my own homemade macaroni and cheese. To make things a bit healthier, and diet friendly for my gluten-free daughter I used Andean Dream Quinoa Macaroni in my recipe. The total time to make this quick meal idea was about 15 minutes. These white cheese sauce is made from butter, whole milk, American, and Mozzarella cheese. However, I di find if you do not eat it while hot the cheese tends to harden back up so that is something I will have to work on next time. However, the taste was fabulous, and my kids their entire portions!

Quinoa Macaroni & Cheese Ingredients:

  • Andean Dream Quinoa Macaroni Pasta
  • 1 tablespoon tapioca starch
  • 1 tablespoon rice flour
  • 2 tablespoons butter
  • 2 cups of whole milk
  • 1 cup white shredded American Deli Cheese
  • 1 cup shredded Mozzarella cheese
  • pinch of salt, Italian spices

Directions:

In a large skillet, heat your butter. Whisk in your flour, and starch-stir until thoroughly combined.

Add in your milk, and constantly whisk, slowly add in one cup of each cheese, stirring constantly.

I found my version to harden back up if cooled rather quickly. As along as you eat it warm it will be fine, but like any fresh cheese it will turn into a semi-soft solid. The flavor of both cheeses is very mild, and delicious! Make sure your cheese is gluten-free-sometimes certain fillers contain wheat. Also, the quinoa pasta gives the meal a nice nutty taste-totally a delicious, quick, easy meal to make!

My Vavo who has since past invented the dish, and it has become a go to recipe for days when you just don’t really feel like cooking. The ingredients are really simple, and relatively inexpensive which is always a plus!

I usually just used regular tuna in my recipe, but this time I used Starkist Garlic & Herb Flavor Fresh Pouch Tuna, and it came out better than ever! I am so happy to have had the chance to review this item because I was missing out! The Garlic & Herb flavors accent the tuna fish & chickpeas wonderfully!

Tuna Fish & Chickpeas Ingredients:

Directions:

Cut your potatoes in half and place them in a stock pot to boil for 20 minutes-leave the skin on.

After your potatoes have boiled, allow them to cool.

Add in chickpeas, tuna, onion, and spice

**Serve at room temperature or chilled. This pairs well with red wine vinegar, and olive oil for an extra kick. I also love that this meal is super healthy, and perfect for dieters, and those who are gluten-free.

My Thoughts:

I decided to store some of my cupcake supplies in it so I could free up some space inside my spice cabinet. I really enjoyed placing my cupcake wrappers, and some of my sprinkles inside, and found it rather fun! I have lost at least 3 piping tips in the last 2 months so I was sure to store those in my BakeStack as well!

One time I used some salt, ice, and a few gallon storage bags-it worked, but my arms were about to fall off before I achieved results. Thankfully, I recently was gifted a Kitchen Aid Ice Cream Maker Attachment, and boy has it made creating ice cream a breeze!

Since it uses half and half rather than whole cream, it is a little more icier, and not as creamy. I LOVED the results, but will add more flavors, and mix-ins next time around.

I cannot express how awesome the Kitchen Aid Ice Cream Maker Attachment truly is! It made making ice cream so much easier than any other method I’ve used in the past! This made a little over a quart of ice cream, and lasted only 2 days! Next time, I hope to make orange pineapple ice cream!

When Starkist came out with their Flavor Pouch varieties, I was over the moon happy! Why be so excited about flavored, pouched tuna you ask? Well, I try to stay clear of anything canned so that is reason one. Another reason is because Starkist Flavor Pouches have the perfect amount of tuna, and spice in each pouch! There is no mayo needed, or even draining required. You can actually just take the entire pouch to work with a fork, and call it a day!

Since Starkist generously sponsored us for our cooking challenge I knew I had to at least make a tuna salad for my first recipe. I generally add much more spice to my tuna salad, but Starkist’s Lemon Pepper variety was so tasty I didn’t need any.

Lemon Pepper Tuna Salad

1 pouch Starkist Lemon Pepper Flavor Pouch Tuna

2 tablespoons mayo

Sprinkle of fresh chopped red onion

Bed of Lettuce, or tomato-also tastes great on an actual salad, or sandwich

-Mix all ingredients, and serve

Regular Tuna Salad Recipe:

1 Pouch of Starkist regular tuna

1 tablespoon mayo

1 tablespoon miracle whip

1/2 teaspoon onion powder, garlic powder, salt, and pepper

Sprinkle of onion, and celery (freshly chopped)

Enjoy on a sandwich, salad or bed of lettuce

There is something about it that screams Summer time to me, and I find myself enjoying my lunch time salads more when I incorporate this fresh cheese into them. For this recipe, I used fresh greens from my garden which included arugula, butter crunch lettuce, and purple salad bowl lettuce.

I typically make caprese salad, but decided to mix things up with some fresh herbs, arugula, fresh mozzarella, and fresh greens. I will have to wait a few more months for tomatoes, but for now I stuck it out with store bought beefsteaks.

Tomato, Fresh Mozzarella & Arugula Salad Ingredients:

Garden Fresh Thyme -5 sprigs

Arugula

Butter crunch lettuce

Salad bowl lettuce

Red Onion

Tomato

Fresh Mozzarella

Vinaigrette, or oil based Dressing

Directions:

If you are serving guests you can lay out the salad on a long, flat plate-if not I suggest simply washing, and chopping the veggies, and making individual salad bowls so that everyone gets their fair share of  cheese. Fresh mozzarella tends to sink, and not dispurse as evenly as I’d like so I find it easier to serve my family their own portions.

Queso Blanco Homemade Queso Blanco Dip Recipe YES Please! Cheese is probably my most favorite food ever invented. I love it in all ways, and do not discriminate against types, or forms! I have been getting really sick of store bought cheese dips that just sit on shelves. Cheese is meant to be refrigerated-not shelf stable! After some trial and error I have finally came up with the PERFECT Queso Blanco Dip that is just..well..scrumptious!

If you are not familiar with Queso Blanco Dip it is pretty much a fancy way of saying “white cheese”. It is best served right out of the pan, or hot (of course), but the best part is it will re-melt in the microwave at a later date. This recipe made almost 3 cups which was fabulous!!

  • 1 Roma tomato, or small garden tomato-drained, and diced
  • 1 Jalapeno Pepper
  • 1 small onion
  • 1 tablespoon oil
  • 3/4 American Deli Cheese
  • 1 full 8oz bag, or shredded bar of Monterrey Jack Cheese
  • 1 cup of milk
  • 1/4 teaspoon salt, black pepper
  • Small bunch of fresh cilantro

Saute onion, and pepper in a large skillet with the oil

Grate cheese

Add in cheese, milk, spices-mix well on low heat until cheese is creamy

Add in tomatoes, and cilantro-cook for about 5 minutes constantly stirring

Put leftovers in a storage container, or mason jar-refrigerate

Queso Blanco Dip Homemade Queso Blanco Dip Recipe YES Please! It is best to eat this dip warm, and served with corn chips as it will turn back into a solid if left out too long

In terms on cooking, that means cool meals, BBQ’s meat, and tons of salads! For our first Meatless May Challenge recipe I decided to create one of my personal favorite vegetable macaroni side dishes ever! This is my own recipe, and has been tweaked over the years. Since my daughter is gluten-free I used Maplegrove Gluten Free Elbow Macaroni.

salad ingredients Gluten Free Vegetable Macaroni Salad A Great BBQ Side Dish! Vegetable Macaroni Salad Ingredients:

1 diced, or shredded carrot

1 diced medium onion

1 diced medium green pepper

1/3 cup mayo

1 tablespoon sugar

1 teaspoon salt & pepper

1/4 white vinegar

Maplegrove Gluten Free Elbow Macaroni

diced veggies Gluten Free Vegetable Macaroni Salad A Great BBQ Side Dish! Directions:

Boil the pasta according to the manufacturer’s instructions

Dice, or shred your veggies

Once your pasta is ready, drain it, and run cold water through it, drain again

Place in a large mixing bowl, and add all the above ingredients

Mix well, and place in the refrigerator-serve chilled

Our family loves our macaroni salad, and since we discovered our youngest daughter is gluten free we’ve had to make one minor tweak to rice based elbow macaroni.
