I’ve tried a few gluten free baked goods including coffee infused cupcakes, and sugar cookies, but other than those I have not done much. Thanks to a recent opportunity to review King Arthur’s Gluten Free Multipurpose Flour, I was able to once again make a favorite family dessert; my homemade, now gluten free lemon squares.

I really love the fact that we can all enjoy them once again! Since lemon is one of my absolute favorite fruits to cook and bake with, I find lemon squares to be an amazing treat! With a small tweak in baking times, I found my gluten free lemon squares to be even tastier than my conventional recipe, and you cannot even tell they are gluten free!

One thing I really loved about the King Arthur Gluten Free Multipurpose Flour was that it required no extra steps. I was using a 1/2 and 1/2 baking mix composed of rice flour, and tapioca starch, but now thanks to King Arthur my time in the kitchen experimenting has been cut in half, and simplified. Each box of King Arthur Gluten Free Multipurpose Flour comes with 24 ounces, or 3 cups of flour. I wish they at least had 4 cups of flour in the box because most recipes call for around 2 cups of flour, but that is ok!

King Arthur gluten free flour Gluten Free Lemon Squares RecipeGluten Free Lemon Squares Ingredients:

  • 1 cups butter softened (2 sticks)
  • 1/2 cup white sugar
  • 2 cups King Arthur Gluten Free Multipurpose Flour
  • 4 eggs
  • 1 & 1/2 cups white sugar
  • 1/1 cup King Arthur Gluten Free Multipurpose Flour
  • 2 lemon juiced, and grated
  • 9 x 13 pan

Directions for Crust:

  1. Pre-heat your oven to 350 degrees
  2. In a bowl mix your 2 cups of flour, 1/2 cup sugar, and softened butter. Press into an ungreased 9×13 pan
  3. Bake for 25 minutes (I noticed gf flour takes longer to firm)

Directions for Filling:

grated lemons Gluten Free Lemon Squares RecipeZest, and juice two whole lemons. I used my new Epicurean Non-Slip Cutting Board which worked amazing! There is nothing more annoying than a cutting board that slips around a counter. This board is not only sleek, but the rubber non-slip corners (red) kept my board in place while I juiced, and grated my lemon peels. I really love this board because it easily stores, is dishwasher safe, and the non-slip corners come off for an easy, thorough cleaning.

Epicurean non slip cutting board Gluten Free Lemon Squares RecipeIn a bowl mix your 4 eggs, 1 & 1/2 cups sugar, 1/4 cup flour, juiced & zested lemon.

Pour over your crust-place back into the oven, and cook for another 25 minutes. Let your bars cool, and cut them into squares.

Baked Crab Rangoons Easy Baked Crab Rangoons Recipe Crab Rangoons are one of my favorite “guilty pleasures”. Until today, I’ve only ever had them deep fried, and at Chinese restaurants, or take out. I love the crisp, flavor, and taste of these appetizers, and could eat them everyday, and by the dozens. Since I’m actively trying to eat healthier I decided it would be my mission to make a batch of healthier, baked Crab Rangoons.

Since I’ve tried all kinds of Crab Rangoons form dozens of restaurants, I’ve found what tastes I prefer. Some places make them too crabby, some too cheesy, and other too sweet. I like a sweet, and savory balance so that is how I concocted my recipe. It was my second time working with wonton wrappers so this time instead of using oil, I used water to mold them, and it worked like a charm!!

Easy Baked Crab Rangoons Recipe

  • Wonton wrappers
  • 1 8oz package of softened cream cheese
  • 1 tablespoon soy sauce
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon (1 large clove) finely minced garlic
  • 2 stalks green onion finely chopped
  • 6 oz of crabmeat. I prefer imitation because it is not too strong. That is exactly what our local restaurants also use.

Uncooked Crab Rangoons Easy Baked Crab Rangoons RecipeDirections:

Preheat oven to 425

Spray two baking sheets with nonstick spray or olive oil

Finely mince your crab, and other ingredients

Fill a small bowl with water (for dipping your fingers in to seal the wrappers)

Mix all ingredients in a large glass bowl until mixture is fully mixed

Using a spoon scoop a little crab mixture into the center of your wrapper

Fold wrapper over into a triangle shape

Dip your fingers in the water to seal the wrapper

Repeat Process-Makes about 36-40

Bake for 10 minutes or until edges are golden brown-don’t be alarmed if they get a little darker-these wrappers tend to crisp up fast-so no more than 12 minutes max!!

From the looks on the fabulously designed bags I knew they were going to taste great. We decided to try the MixtBag of Liberty (red, white, and blue) Tortilla Chips first. We paired them with some fancy swiss, and wow were they great!

RW Garcia Tortilla Chips come in mixed bags of red, white, and blue chips, and are lightly salted with sea salt. They are much thicker than most brands of tortilla chips, and have an amazing crunch! These chips are so hearty that they would make a great compliment to queso, guacamole, and salsa. Having a chip that does not crumble, or break in my hands is wonderful! I am going to have to pick up a Liberty MixtBag  for my Fourth of July Celebration because they are so festive looking, and of course would complete the party!

Dippers Looking for a Healthy Chip? Look no Further! Introducing RW Garcia Chips! We also greatly enjoyed the 3 Seed Curry & Mango Dipping Chips. The flavors were so tantalizing, and mouth watering that we did not even feel the need for guacamole, or dip! However, if you do want to kick things up a notch these are perfect for parties, and snacking! I found the 3 Seed Blue Corn Dippers to be wonderful, and I would definitely consider pairing these with a nice creamy queso!

I’m all about trying out new foods, and snacks so when my latest opportunity came along to try Nature’s Bakery 100% Natural Fig Bars, I was totally on board. I love fig bars so was excited to see what made these bars stand out from the rest. The fact that they boasted the “all natural” factor really appealed to me because most baked goods are far from natural. I couldn’t wait to try them out…

I received several flavors, but really enjoyed the Peach Apricot Fig Bar, and Vanilla Fig Bar- I thought these tasted genuine, and true to taste; there were no chemical aftertastes.

I used to eat a major competitor’s fig bars, but would rather support Nature’s Bakery, a company that cares about a well balanced life! I love how even my daughter can read all the ingredients on the products nutritional facts. There are no nasty chemicals, or preservatives in these snacks!

At first, I thought my daughter would be deprived of so many of her formerly favorite foods. I was naively under the impression that breads, pastas, and most snacks would be banned from her menu forever. After speaking to a good friend who lives with Celiac’s Disease she encouraged me, and motivated me to scope out brands that made foods that were safe for my gluten intolerant child.

After some research, and several shopping trips I found some great brands that were a bit more expensive than what I was used too. However, they were safe for my daughter, and that was all that mattered. One of my favorite brands I came across was Schar-gluten-free foods. They are the self proclaimed “leading experts on gluten-free food” which I can easily agree with! I was initially attracted to the bright yellow packaging of their foods on my local supermarket shelves. After realizing that my daughter loved their sub rolls, and cookies I knew they were a keeper.

Shortbread Cookies-These reminded me of the very same delicious cookies you find in tins around Christmas time. They looked similar to other cookies, and smelled great. Of course my kids loved these-what kid doesn’t like cookies?

Cheese Bites-I really loved the shape of these baked different shaped treats. I thought they were really fun, and had a very mild baked cheese taste. My daughter used to love baked cheese snacks so it was no surprise these were a hit.

HoneyGrams-These came at the perfect time! One day while visiting a family member a hospital worker generously gave each of my kids a pack of graham crackers. I politely accepted them, and later had the children give them back to me until we were home because  my daughter was unable to eat them. I felt really bad about this because she LOVED these sweet treats. Thankfully, I remembered I had the Schar Honeygrams, and gave some to my daughter, and she loved them. Schar gluten free foods saved the day!

These grahams are slightly sweet, and baked to a golden honey appearance. They are thicker than traditional grahams, but my daughter loves them, and that is all that matters. It is hard to find an easily accessible brand that produces gluten free snacks do I am so excited that we can depend on Schar!

Penne, Fusilli, & Anellini-To be 100% honest, Schar gluten free pasta is BETTER than regular varieties. It does foam a bit more when boiling, but the taste is amazing!! I would pay the extra money to have my entire family eat this brand because (a.)  it tastes great! (b.) it is so much easier making one meal!!

Overall, I LOVE Schar gluten free foods, and I WILL be a long time customer. This company has allowed my baby to eat subs, cookies, crackers, and her favorite pasta dishes. I want her to live a normal, healthy live, and companies like Schar make that possible. I give them two thumbs up for great tasting products that taste even better than gluten filled varieties!

How to Make Apple Butter & Can it!

I admit, until I recently made my own apple butter, I was always under the assumption that it was actually butter with an apple flavoring -boy was I wrong! Apple Butter is very similar to applesauce with the exception that it is much more chunkier. If you love apples you will love this easy to make treat, and recipe substitute.

This recipe is worked wonderfully for me, and I was even able to skip using apple juice! I plan on using this an an oil, and butter substitute while baking things like cupcakes, and even pancakes to make them healthier for my family.

Apple Butter How to Make Apple Butter & Can it!Apple Butter Ingredients:

  • 5 lbs apples peeled, and cored-I used a mix of Gala, Granny Smith, and Red Delicious just because that is what I hand on hand
  • 1/2 cup steaming liquid
  • 2/3 cup maple syrup or honey
  • 2 tablespoons vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon cinnamon
  • 1 teaspoon of nutmeg

There are so many ways to make apple butter, but this is what worked best for me:

I steamed my apples in a large stockpot

Once apples are tender remove, and drain any excess fluid-be sure to reserve it because you will need at least a 1/2 cup.

Using a food processor, or mixer-smush apples-do not overly process them-they should be slightly chunky

Add apple mixture to a large glass bowl-add in all your spices-mix well

This recipe only made 1 quart sized jar for me, and I did pressure can it.

 

Apple butter How to Make Apple Butter & Can it!Pressure Canning Instructions:

Wash, sanitize your jar(s) with hot soapy water

Make Sure the pressure canner is clean

Insert rack

Fill with 2-3 inches of water

Place jars inside. *used the Fagor Duo 9-Piece Pressure Canning Set-up to 4 qt sized jars

Bring the water to a boil

Seal the pressure cooker with it’s lid

Set the operating valve to number 1 {8 psi} -*see you owner’s manual

Start timing once the pressure indicator rises and a steady stream of steam comes out of the operating valve for the first time

Let it pressurize your cans for 8 minutes

Allow the pressure canner to de-pressurize naturally by removing from heat

Once the pressure indicator drops, you can open it up

Remove the jars using tongs, and place them on towels, or a cooling rack

Once the jar lids cool, and suck in you are all set!!

*Warning these will be super hot so keep them out of reach from pets, and small kids!!

pickled onions Easy to Make Pickled OnionsI grew up eating pickled peppers, onions, and even eggs. Us Portuguese people tend to LOVE our hot peppers, and spicy foods. I would ideally love to make pickled peppers in the future, but for this canning post I kept it super simple. From the age of 5-12 pickled onions would be something my dad would have on the table with all meals. Portuguese bread, and pickled onions were an add on to meals like pork chops, beef stew, and more.

Pickled Onions are something that I sadly have not had, nor purchased made myself for years so I felt it was about time to make my own. A really simple recipe to make some awesome pickled onions is pretty simple. Portuguese Red Wine Vinegar, and small white pearl onions, or tiny yellow onions are ideal for this pickled treat.

I decided to make 2 quart sized jars of this treat to enjoy with my family. I found that after 1-2 weeks pickled onions taste the best because by then they have absorbed all the yummy goodness of the vinegar. Surprisingly these taste awesome as a snack, or compliment to mashed potatoes, and salads. *I pressure canned my pickled onions, but if you feel as if you will eat these within a month then you can just refrigerate them.

Ingredients:

  • 10 small yellow onions, or 15 Pearl Onions-halved
  • Red Wine Vinegar-at least 40 oz
  • 2 Quart Sized canning jars

Directions:

*Please keep in mind I pressure canned these using my Fagor Duo Pressure Canning Kit. You can water bath these, or just store them in the fridge for up to one month.

Pressure Canning directions:

Make Sure the pressure canner is clean

Insert rack

Khloe ate them all and really enjoyed them. I didn’t try them because they were meant for my daughter, but I can say they smelled good, and suited my picky 3 1/2 year old’s taste.

Trails end trail mix Bee Nut Free: Great Tasting Allergy Friendly Snacks Free From Major Food Allergies! The Trail Mix was a Bee Nut Free product that I found so intriguing, and appealing. At first glance it appears there are nuts in the bag, but in reality there are none! The mix consists of items like gluten free oats, chocolate chips, dried blueberries, banana, roasted pumpkin seeds, and more! Khloe ate most of the mix, but I enjoyed the rest. I thought it tasted unique, fresh, and tasty-so good!

My husband ended up eating the Cranberry Citrus Energy Bar, and Sunflower Ginger Bar because my daughter did not care for them. Even though the products are amazing I don’t hold my 3 year old’s picky tastes against them. She did however enjoy the granola bar products. Personally, I am amazed at how great these snacks taste because they are free from typical food allergens!

I know chips are the type of food that can throw me way off track when it comes to maintaining a healthy diet. I try to stay far away from most brands because they are just too irresistible! Recently, while looking for gluten-free snacks, and foods that were appealing for my daughter, I came across  Way Better Snacks.

Come to find that my local markets carry the very snacks in which I received to review. The healthy, organic isles are still fairly new to me, but I hope to be more attentive in time to available brands. Now that my family and I have enjoyed Way Better Snacks I will have to add them to my grocery list for sure!

The chips arrived neatly packed, with some very informative, and humorous information about the company. I really found the product package to be modern, innovative, and appealing. Each individual bag had a real-life image of the main ingredient they were made of. I have never seen blue corn in real life so seeing it on two of the bags was really neat!

However, come to find these chips are extremely healthy, and packed with nutritious ”sprouted” ingredients. At first I wasn’t even exactly sure what “sprouted” meant. Come to find out, sprouting provides increased vitamins, minerals, antioxidants, digestibility, and nutrient absorption!
